Tomato, Beet & Cilantro Salad

When people think of tomatoes they generally jump straight to basil but this just proves other herbs pair great with tomatoes too!

This recipe comes from Jess Damuck’s cookbook “Salad Freak”.

To make the salad —

  • slice up 3 large in-season tomatoes and peel and slice 3 beets (golden or red)

  • half all of 1 pint of cherry tomatoes

  • chop up a bunch of cilantro (so that there is about 1/2 cup chopped)

Arrange all of this on a large serving plate and top with drizled olive oil, flaky salt and a bit of pepper.
