Grain bowl with Chives, Avocado, and Cucumber

We found this combination in Nigel Slater’s cookbook “Greenfest: Spring, Summer”. Like all the recipes in the book it is blissfully simple but with an excellent result!

Here’s how it’s done:

  • Cook up 1 cup of your grain of choice, Slater recommends Freekeh but farro or quinoa would be great too.

  • In a large bowl, combine your cooked grains, 1 can of chickpeas (strained) 1 diced avocado, chopped chives (~1/4 cup), 2 tbs olive oil, 1 tsp balsamic vinegar and the juice of 1 lemon. He also adds in 2 tsp of ral el hanout (a Indian spice mix) but you could toss in any spice that calls to you — I often add some red pepper flakes or zatar on top.
