Date and Dill Rice Bowl
This is a simple, 1 pot recipe we learned from one of our favorite cookbooks, Eden Grinshpan’s “Eating Out Loud”.
Here’s how it’s made:
In a medium pot add 2 tbs olive oil, 1 chopped onion, 2 minced garlic cloves, and a pinch of salt. Saute until the onion is translucent.
To your pot, add 1 cup of rice (uncooked) and 1.5 cups of chicken broth or vegetable broth. Bring to a boil and cook until all liquid has been absorbed.
Fluff your rice mixture with a fork and add 2 cups of chopped dill, 1/2 of chopped dates, and the juice of one lemon.
