Parsley- Vinaigrette with White Beans over toast

In a food processor blend the following until smooth to make your parsley vinegrette:

  • 1/4 cup white wine vinegar (or white balsamic vinegar)

  • 1/2 cup olive oil

  • ~1 cup of parsley

  • a pinch of salt

  • a light drizzle of honey

In a sauce pan over medium heat, warm up 1 can of white beans (strained) and your parsley vinaigrette.

Serve your parsley vinegrette-bean mix over toast.
